Lentinula edodes is the world's second most cultivated mushroom and one of the most medicinally significant. Lentinan, its primary beta-glucan, was approved as an injectable immunotherapy in Japan for gastric cancer treatment in 1985. Eritadenine, a unique adenine derivative found only in Shiitake, has been shown to support healthy cholesterol metabolism by inhibiting the enzyme that converts homocysteine to methionine, thereby reducing plasma cholesterol levels. Shiitake is also an exceptional source of ergothioneine and B vitamins, making it a nutritionally dense ingredient for cardiovascular and immune health products.
